Food waste stands as a formidable challenge with global ramifications, affecting not just the availability of food but also squandering precious resources such as water, labor, energy, and land. Each year, roughly one-third of all food intended for human consumption, which equates to about 1.3 billion tonnes, is either lost or goes to waste. The consequences of this loss extend beyond mere wastage; when discarded food finds its way into landfills, it significantly contributes to the emission of greenhouse gases, particularly methane, which plays a pivotal role in climate change.

  1. Plan Your Meals: A little planning goes a long way. Plan your meals for the week and make a shopping list. Stick to it to avoid impulsive buys that often end up as waste.

  2. Understand Expiry Dates: 'Best before' and 'use by' dates are different. 'Best before' is about quality, while 'use by' is about safety. You can often consume food past its 'best before' date, as long as it looks and smells fine.

  3. Store Food Properly: Proper storage extends the life of your food. Learn which fruits and vegetables should not be stored together, and the best ways to store herbs, bread, and leftovers.

  4. Get Creative with Leftovers: View leftovers as ingredients for new meals. Turn stale bread into croutons, blend wilting vegetables into a soup, and use leftover grains in stir-fries or salads.

  5. Use Everything: Embrace 'nose-to-tail' or 'root-to-stem' cooking. Vegetable peels, meat bones, and herb stems can be used to make stocks and broths. Overripe fruits are perfect for baking or smoothies.

  6. Preserve and Ferment: Learn the art of canning, pickling, and fermenting. These age-old techniques not only reduce waste but also add exciting flavors to your pantry.
