Ingredients

SERVES 2

 

  • 1 tbsp mustard
  • 2 tbsp apple cider vinegar
  • 4 tbsp olive oil
  • 3 artichokes
  • 1 fennel bulb
  • Dill flowers
  • Salt and black pepper

Method

  1. Whisk the mustard and apple cider vinegar together in a small mixing bowl. Gradually blend the olive oil into the mixture. Season with salt and pepper and put aside.
  2. Slice the artichokes and fennel using a mandoline slicer. Put in a large bowl and mix.
  3. Add the dill flowers.
  4. Mix in the sauce you set aside earlier.
  5. Season with salt and pepper.
