Ingredients:
120 g salmon skin
100 g leftover mayo
30 ml lemon juice
30 g dill
25 g parsley stems
10 g olive oil
5 g lemon zest
5 g thyme
5 g salt
Preparation:
Preheat the oven to 180°C.
Arrange the salmon skins on a tray lined with baking paper and season them with salt.
Drizzle with olive oil, cover with another tray lined with baking paper, and bake in the oven for 5 minutes, or until crispy.
In a chopper, combine the herbs (dill, parsley stems, and thyme), lemon juice, and zest. Blend these ingredients with the leftover mayo.
Serve the crispy salmon skins with the fresh herb mayo.
