Ingredients:

  • 120 g salmon skin

  • 100 g leftover mayo

  • 30 ml lemon juice

  • 30 g dill

  • 25 g parsley stems

  • 10 g olive oil

  • 5 g lemon zest

  • 5 g thyme

  • 5 g salt

Preparation:

  1. Preheat the oven to 180°C.

  2. Arrange the salmon skins on a tray lined with baking paper and season them with salt.

  3. Drizzle with olive oil, cover with another tray lined with baking paper, and bake in the oven for 5 minutes, or until crispy.

  4. In a chopper, combine the herbs (dill, parsley stems, and thyme), lemon juice, and zest. Blend these ingredients with the leftover mayo.

  5. Serve the crispy salmon skins with the fresh herb mayo.
