Ingredients:

  • 2 pieces of leftover flatbreads

  • 100 g leftover cooked vegetables (such as roasted bell peppers, zucchini, and eggplant)

  • 50 g crumbled feta cheese

  • 25 g sliced olives

  • 10 g fresh parsley, chopped

  • 5 g salt

  • 5 g pepper

For the sauce:

  • 20 g tahini

  • 20 g water

  • 10 ml olive oil

  • 1 clove of garlic

  • 5 g salt

  • 5 g black pepper

Preparation:

  1. Preheat your oven to 200°C.

  2. In a blender, combine tahini, water, olive oil, and garlic. Blend until smooth, adding more water as needed to reach your desired consistency. Season with salt and pepper to taste.

  3. Place the flatbreads on a baking sheet and spread a thin layer of the tahini sauce on each.

  4. Top the flatbreads with the leftover cooked vegetables, crumbled feta cheese, and sliced olives. Season with salt and pepper.

  5. Bake the flatbreads in the preheated oven for 10-12 minutes, until the edges are crispy and the cheese is melted and bubbly.

  6. Remove the flatbreads from the oven and sprinkle with chopped fresh parsley. Cut into slices and serve hot.
