Ingredients
- 150 g leftover egg whites
- 250 g powdered sugar
- A pinch of salt
- 300 ml double cream
- 20 g sliced almond
- 15 g brown sugar
- 50 g strawberries
- 50 g raspberries
Preparation
Beat the egg whites and salt with an electric mixer, then gradually add powdered sugar and continue beating until it becomes glossy.
Preheat the oven to 150°C.
Using a piping bag filled with meringue, draw long strips on a baking sheet lined with parchment paper. Sprinkle sliced almonds on top and place it in the oven.
Place the meringue in the oven and reduce the temperature to 130°C. Bake for 45 minutes.
Once removed from the oven, place a piece of parchment paper and a kitchen towel on top of the meringue, then flip it over. Remove the bottom parchment paper and allow it to cool completely.
For the cream filling, take double cream in a mixing bowl and whisk it with brown sugar until it thickens with electric mixer.
Spread the cream on the cooled meringue, reserving some for decoration.
Add strawberries and raspberries as a filling and carefully roll the meringue.
You can decorate the top with the remaining cream and forest fruits.
