It's a vegan delight that harnesses the full potential of your leftover fruits like berries, apples, and pears. Combined with the nutritional goodness of rolled oats and almond meal, this recipe transforms what might have been waste into a taste sensation. These bars are slightly sweet, courtesy of grape molasses, with a hint of warmth from the cinnamon. They are perfect as a breakfast-on-the-go or a guilt-free mid-afternoon snack.

5 minutes /15 minutes

Ingredients:

  • 150 g leftover mixed fruit (such as berries, apples, and pears)

  • 80 g rolled oats

  • 50 g almond meal

  • 10 g grape molasses

  • 10 g coconut oil, melted

  • 5 g cinnamon

  • A pinch of salt

Preparation:

● Preheat the oven to 180°C and line a baking dish with parchment paper.

● Use a food processor to pulse the leftover fruit into small pieces.

● Add the rolled oats, almond meal, grape molasses, coconut oil, cinnamon, and salt to the food processor. Continue to pulse until all the ingredients are combined, forming a thick mixture.

● Press the mixture into the prepared baking dish.

● Bake for 25-30 minutes, or until the bars are golden brown and firm to the touch.

● Allow the bars to cool before slicing them into bars.
