Ingredients:
- 2-piece filet mignon
- 10 g butter
- 5 g fresh rosemary
- 5 g fresh thyme
- 5 g kosher salt
- 5 g fresh black pepper
- 80 g potato
- 60 g carrot
- 30 g broccoli
- 30 g cauliflower
- 100 ml broth
- 10 g butter
- 5 g cornstarch
Preparation
Wash the vegetables thoroughly. Peel potato and carrot but save the peels for later. Cut the stems of the broccoli and cauliflower, also saving them for later. Cut vegetables into bite-sized pieces.
Place the vegetables in a steaming basket and steam in a pot.
Take vegetable peels and stems in a pot, add broth on top and bring it to a boil for 10 minutes. After 10 minutes, strain the sauce and keep boiling.
Lastly add cornstarch and 1 tbsp water mixture to the sauce for 2 minutes turn down the heat. Add butter and stir well.
Heat a pan on the oven. Sprinkle salt and pepper on all sides of filet mignons, cover with olive oil. Place filet mignons in the pan and cook all sides for 2 minutes for rare steaks.
Add butter, rosemary and thyme to the pan and cook the steaks 2 more minutes while coating.
Serve with gravy sauce and steamed vegetables.
