Ingredients:
- 2 quail
- 80 g onion, chopped.
- 70 g whole grain rice
- 35 ml coconut milk
- 20 ml tomato sauce
- 2 lemon slices
- 10 g parsley, chopped.
- 10 ml olive oil
- 5 g salt
- 5 g black pepper
- 5 g cumin
Preparation
Preheat oven to 180°C.
Rinse the rice and take a side. Take an oven tray and mix onion, rice, coconut milk, tomato sauce and spices on the bottom.
Place quails and lemon slices on top. Drizzle olive oil and cover with a lid.
Bake in the oven for 20 minutes. After 20 minutes open the top of tray and bake for 10 more minutes.
Rest the dish for 10 minutes and serve with chopped parsley on top.
