Ingredients:

  • 2 quail 
  • 80 g onion, chopped.
  • 70 g whole grain rice  
  • 35 ml coconut milk
  • 20 ml tomato sauce
  • 2 lemon slices
  • 10 g parsley, chopped.
  • 10 ml olive oil
  • 5 g salt
  • 5 g black pepper
  • 5 g cumin  

Preparation

  • Preheat oven to 180°C. 

  • Rinse the rice and take a side. Take an oven tray and mix onion, rice, coconut milk, tomato sauce and spices on the bottom. 

  • Place quails and lemon slices on top. Drizzle olive oil and cover with a lid. 

  • Bake in the oven for 20 minutes. After 20 minutes open the top of tray and bake for 10 more minutes.

  • Rest the dish for 10 minutes and serve with chopped parsley on top. 

  • Enjoy!
