Ingredients

  • 3 egg yolks
  • 480 g whole milk
  • 240 g heavy cream
  • 200 g brown sugar
  • 40 g whey caramel (recipe in kitchen tips)
  • 30 g salted butter
  • 30 g cornstarch
  • 10 g vanilla extract 

 

Preparation

  • In a heavy-bottomed pot, melt the butter over medium heat.

  • Add the brown sugar to the pot and stir until the sugar and butter are completely melted and well combined.

  • Stir in the cornstarch until it is fully incorporated.

  • Pour in the heavy cream and whole milk, stirring continuously.

  • Bring the mixture to a slow rolling boil, stirring constantly. Let it thicken until it coats the back of a spoon.

  • In a small bowl, place the egg yolks. Gradually spoon a small amount of the hot milk mixture into the bowl with the egg yolks, whisking constantly to temper the yolks.

  • Pour the tempered egg yolk mixture back into the pot, stirring well.

  • Bring the mixture back to a boil and cook for 1 minute.

  • Remove the pot from heat and add the vanilla extract and 30 g whey caramel into the mixture.

  • Pour the mixture into the serving bowls. 

  • Rest in the fridge for at least 15 minutes. 

  • Serve with more drizzle caramel on top.
