Ingredients
- 3 egg yolks
- 480 g whole milk
- 240 g heavy cream
- 200 g brown sugar
- 40 g whey caramel (recipe in kitchen tips)
- 30 g salted butter
- 30 g cornstarch
- 10 g vanilla extract
Preparation
In a heavy-bottomed pot, melt the butter over medium heat.
Add the brown sugar to the pot and stir until the sugar and butter are completely melted and well combined.
Stir in the cornstarch until it is fully incorporated.
Pour in the heavy cream and whole milk, stirring continuously.
Bring the mixture to a slow rolling boil, stirring constantly. Let it thicken until it coats the back of a spoon.
In a small bowl, place the egg yolks. Gradually spoon a small amount of the hot milk mixture into the bowl with the egg yolks, whisking constantly to temper the yolks.
Pour the tempered egg yolk mixture back into the pot, stirring well.
Bring the mixture back to a boil and cook for 1 minute.
Remove the pot from heat and add the vanilla extract and 30 g whey caramel into the mixture.
Pour the mixture into the serving bowls.
Rest in the fridge for at least 15 minutes.
Serve with more drizzle caramel on top.
