Traditional taste that respects food: Aşure.


Aşure is a traditional dessert from Turkish cuisine that is typically prepared during the month of Muharram, especially on Aşure Day. Aşure is also known as "Noah's Pudding" because, according to legend, it was made by combining all the ingredients aboard Noah's Ark.

 

Aşure is a sweet dish usually made with a variety of grains, dried fruits, nuts, and sweetened with sugar. This dessert is created by combining various ingredients such as wheat, chickpeas, kidney beans, raisins, figs, apricots, walnuts, almonds, and more. Each ingredient carries its own symbolic meaning and together they create a dessert with rich flavors and textures.

 

Furthermore, Aşure is an example of respect for nature and food. The ingredients used in this dessert are often excess or leftovers from other recipes. Aşure encourages reducing waste, preventing food waste, and utilizing natural resources more efficiently by bringing these ingredients together. In this way, Aşure embraces a sustainable approach and shows respect for both nature and food.

Ingredients

  • 500 ml water
  • 100 g mixed leftover grains (such as barley, wheat, chickpeas, and lentils)
  • 100 g sugar
  • 50 g orange peeled and diced.
  • 50 g apple peeled and diced.
  • 50 g pear peeled and diced.
  • 50 g raisins
  • 50 g dried apricots, chopped.
  • 50 g walnuts, chopped.
  • 50 g pomegranate seeds
  • 10 g sliced almond
  • 10 g coconut flakes
  • 5 g cinnamon
  • 5 g cardamom

 

Preparation

  • Add leftover grains to a large pot with 500 ml water. Bring to a boil and let simmer for about 5 minutes.

  • Add the sugar and stir until dissolved.

  • Add the diced orange, apple, pear, banana, raisins, and dried apricots. Mix well and let simmer for another 10 minutes.

  • Remove from heat and stir in the chopped walnuts, pomegranate seeds, ground cinnamon and ground cardamom.

  • Let it cool for a few minutes before serving in individual bowls.

  • Serve with sliced almond and coconut flakes on top.
