Ingredients

  • 150 g leftover egg whites
  • 250 g powdered sugar
  • A pinch of salt
  • 300 ml double cream
  • 20 g sliced almond 
  • 15 g brown sugar
  • 50 g strawberries
  • 50 g raspberries

 

Preparation

  • Beat the egg whites and salt with an electric mixer, then gradually add powdered sugar and continue beating until it becomes glossy.

  • Preheat the oven to 150°C.

  • Using a piping bag filled with meringue, draw long strips on a baking sheet lined with parchment paper. Sprinkle sliced almonds on top and place it in the oven.

  • Place the meringue in the oven and reduce the temperature to 130°C. Bake for 45 minutes.

  • Once removed from the oven, place a piece of parchment paper and a kitchen towel on top of the meringue, then flip it over. Remove the bottom parchment paper and allow it to cool completely.

  • For the cream filling, take double cream in a mixing bowl and whisk it with brown sugar until it thickens with electric mixer.

  • Spread the cream on the cooled meringue, reserving some for decoration.

  • Add strawberries and raspberries as a filling and carefully roll the meringue.

  • You can decorate the top with the remaining cream and forest fruits.
