This just can’t be summer love.

They say summer loves are never forgotten... We know. That's why we looked for a way to reuse the flavors of summer in this recipe.
In order to never waste the vegetables that combine with all the flavor of summer, we have created a recipe where you can combine them comfortably.
You can use their skins as well as the vegetables you use in this recipe. You can use it for decorations or you can dry it in the oven to create crispy vegetable pieces.

Preparation time/ Cooking time:

10 minutes / 15 minutes

Ingredients

  • 200 g aged summer vegetables (such as eggplant, zucchini, peppers, onion, tomatoes)
  • 100 g yogurt
  • 50 g tomato sauce
  • 10 ml extra-virgin olive oil 
  • 1 clove garlic, chopped.
  • 5 g salt
  • 5 g white pepper

 

Preparation:

  • Wash and slice the vegetables into round shapes.

  • Preheat the air fryer to 180°C and place the vegetables inside. Spray olive oil on top. Fry for approximately 10-15 minutes.

  • Whisk the yogurt in a bowl with chopped garlic.

  • Separate yogurt into two serving bowls.

  • Place the fried vegetables on top.

  • Pour the tomato sauce, salt, and pepper on top and serve it.

  • Enjoy!
