Ingredients

  • 100 g chicken breast cooked and sliced.
  • 100 g chickpeas, cooked.
  • 100 g ripe avocado, sliced.
  • 50 g green lentils, cooked.
  • 50 g leftover asparagus, chopped.
  • 30 g bell pepper, sliced.
  • 2 pak choi leaves, separated and chopped.
  • 20 ml extra virgin olive oil
  • 5 g salt
  • 5 g black pepper
  • 2 lime slices
  • Fresh mint leaves, chopped.

 

Preparation

  • In a large bowl, combine the sliced chicken breast, chickpeas, avocado, cooked green lentils, pak choi, leftover asparagus, mint leaves, and sliced bell pepper.

  • Drizzle the extra virgin olive oil over the bowl.

  • Season with salt and pepper, according to your taste.

  • Toss all the ingredients together until well combined.

  • Divide the mixture into two serving bowls.

  • Serve with lime slices.

  • Enjoy!
