Ingredients
- 150 g quinoa
- 300 ml water
- 25 g arugula
- 25 g cherry tomatoes, halved.
- 15 g strawberries, halved.
- 15 g purslane
- 10 ml olive oil
- 10 g walnuts, chopped.
- 5 g fruit powder (recipe in kitchen tips)
- 5 g salt
- 5 g pepper
Preparation
In a saucepan, combine quinoa and water. Place it on the stove and cook over high heat until it comes to a boil. Once boiling, reduce the heat to low and simmer for 10 minutes. Fluff the quinoa with a fork and set it aside.
In a bowl, mix the cooled quinoa with the vegetables. Add salt, black pepper, and fruit powder, and stir to combine.
Divide the mixture into bowls and serve.
